Variety* (asterisk) Denotes variety as open-pollinated, and in most cases a legitimate heirloom.

Growth habit: Det = Determinate (Grows to a certain height, then stops. Most of crop is borne within a 4 to 6 week period.) Ind = Indeterminate (Continues to grow and bear fruit all through the growing season. Perhaps not as many fruits on at one time as determinate types, but may produce more overall because of extended harvest season.)

 Amish Paste*  74 Ind  This one has been handed down for generations in Amish families. Dark pink fruits average 7-8 oz, and have a great taste. They can double as a slicer! 1, 2, 10, 22, 23, 24 
 Aunt Mary's Paste Tomato*  75 Semi-

 Originally from Wisconsin. Small shiny 3" by 1 1/2" fruits average 3-4 oz. Blemish free and prolific.  20
 Baylor Paste*  78 Ind  From the Baylor family of Texas. 4-6 oz plum shaped, thick walled and blemish free.  13
 Bellstar  74  Det  Very early dark red 4-6 oz paste tomato. Relatively juicy, makes a good slicer too!  2, 3, 4, 8
 Big Red Paste    Ind  Good yields of 8-16 oz large paste type fruits with good flavor.   SSE (17)
 Black Plum  78 Ind  Russian variety with good taste...deep mahogany to brown fruit from 1 1/2-3" long. Roma shaped. Very meaty.  2, 10, 11, 21
 Bulgarian Triumph*  75 Ind  Very good yields of 2-4 oz juicy and VERY SWEET fruits. This tomato can be added to tomato sauce instead of other sweeteners when there is too much "bite. Equally good as a slicer.  SSE (17)
 Canadian Long Red  90 Ind  2x5 fruits, moderate yield, very meaty paste type.  SSE (17)
 Carol Chyko's Big Paste*  90 Ind  A favorite in my 1995 trials. Although we didn't get many fruits, they were all HUGE--more than 1#, good tasting and meaty.  SSE (17)
 Debarao*  72 Ind  Russian plum from the Farmer's Market in Irkutsk, Siberia. Smooth oval, deep red and firm 3-4 oz fruits are great for salads and sauce.  4

 Denali  65 Ind  Plum shaped red tomato from Alaska. Tangy flavor.  13

 

Dominick's Paste*

   Ind  Large, Roma-shaped, multi-purpose Italian tomato. Juicy with a fresh flavor and firm texture.  8
 Giant Paste*  72 Ind  Handed down through an Oklahoma family, this is a large, oval, 6-10 oz fruit that is so tasty it can be used for sauce, canning, or as a slicer.  2
 Gilberte's Paste*    Ind  A long sweet paste tomato from High Mowing Organic Seed Farm. Similar to Sausage.  20
 Grandma Mary's*  68 Ind  Large meaty 6-10 oz paste tomato. Sets even in cool weather.  3
 Hogheart  85 Ind  Hogheart is orignally from Italy, and as far as I'm concerned is the best paste tomato going! Huge, averaging 12 oz. Sometimes they twin and are really heart-shaped.  SSE (17)
 Howard German Paste  80 Ind   Old variety that bears 5 1/2" long pointed 5 oz meaty fruits. Excellent for processing.  2
 Hungarian Italian*  90 Ind  Produces very high quality paste tomatoes, meaty with few seeds. Late to ripen, but can be finished indoors.  SSE (17)
 Italian Gold Hybrid  70 Det  This is a "Golden Roma". Pear shaped fruits are easy to peel, juicy, and very high in natural pectins.  1, 2, 15, 23
 La Rossa VF2  78 Det  Italian type, thick and dry. 4 oz fruits are best for processing.  4, 6, 18

 Milano  63 Det  Italian paste. Hybrid plum-type tomato with very compact bushes. These are quite dry and cook down quickly. Try drying them.  16
 New Zealand Paste*  80    Large, meaty bell-shaped pink canning tomato. Heirloom variety is tolerant of heat and drought.  2
 Opalka*  85 Ind Large Polish paste thhat was a hit in our 1995 trials. Vigorous plants produce 2 1/2x6 plump pepper-shaped red fruit with orange shoulders. Good taste for fresh eating, too.  SSE (17)
 Oroma  87 Det  Smooth cylindical 4 oz canning tomato, comes in clusters. These are "pointy shaped, 3-3 1/2 long, and very easy to peel.  8, 15, 19
 Palestinian*  80 Ind  Large crops of 6-8 oz dark pink paste type fruits. Full flavored.  2
 Peasant*  67 Det   Siberian paste. Classic Roma-shaped 3-4 oz thick walled fruits. Great fresh taste as well.  SSE (17)
 Polish Paste*  85 Ind  Very prolific, large red paste tomato. Fruit is 4-6" long with a pointed end. Meaty and good tasting.  2, 11
 Red Sausage  85  Det  Good yields of 4 1/2-5 long sausage shaped Roma style fruits.  8
 Roma  75 Det  This is a classic paste tomato. Compact vines and meaty fruits which ripen early and nearly all at once.  1,2,5,6,11,12,

 San Marzano*  80 Ind  Sets the standard for paste and processing. Rectangular pear-shaped, red, meaty, and up to 3 "long.  1, 2, 6, 14

 San Remo  76 Ind  Italian paste tomato. Large sausage shaped, heavy, with few seeds.  16
 Sausage  75 Ind  Uniquely shaped long, up to 6. Prolific red and dry paste tomato.  1, 2, 23
 Sausalito Hybrid  72 Det  Round, deep red, 3 oz fruits that make thick sauce. The plants are multiple disease resistant.  1, 2, 5
 Sheriff VFFN  75 Det  Dense texture and rich tomato taste. Mid-size 3-4 oz firm plum fruits ideal for salsa and sauce.  4
 Sochulak*  70 Ind  Old variety, not entirely blemish free but being selected here in Maine for earliness and disease resistance. Oval, pink-red and very meaty.  3, 20, 21
Square Paste VF 74 Det  Firm square-round crimson fruits. High yields.  2

 Super Italian Paste*  73 Ind  Shaped like a banana pepper, about 6 long. The color is a deep red-orange. Very little juice and few seeds--all meat!  2, 22
 Super San Marzano Hybrid  70 Ind  A hybrid version of the old standard San Marzano. Large, pear-shaped, and about 5" long! Fruit is naturally high in pectin and will give a thick sauce.  1, 2, 23
 Tip Top*  70 Det  Top shaped paste tomato that is smooth, mild, and blemish free. High yields of 4oz fruits. 6,13 
 Tom Patti's Paste*  85 Ind  A hit in our 1995 trials! Good tasting, solid, heart shaped fruits with food production. One of the reddest tomatoes I've ever seen.  SSE (17)
 Viva Italia VFFNA  76 Det  Very adaptable classic blocky pear-shaped red fruit. High yielder with a zesty flavor.  1,2,8,15, 18, 19, 23
 Wonder Light*  78 Ind  Russian yellow plum. Lemon shaped and lemon sizedbright yellow fruits are good tasting, firm, and make a great addition to salads and salsas.  4
